- Fine bulgur wheat - 100 grams
- Water - 200 milliliters
- Salt - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Ground allspice - 1/2 teaspoon
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 50 grams, shredded
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - 1/4 teaspoon
- Pine nuts - 2 tablespoons, toasted
- Lemon juice - 1 tablespoon
Steps
- In a bowl, combine the fine bulgur wheat with water and salt, and let it soak for about 30 minutes until softened.
- In a skillet, heat olive oil over medium heat, add the chopped onion, and sauté until translucent.
- Once the bulgur has absorbed the water, mix in the sautéed onion, ground cinnamon, and ground allspice, and knead until smooth.
- Take half of the bulgur mixture and press it into a rectangular shape on a lightly oiled surface, about 1 cm thick.
- In a separate bowl, combine the feta cheese, mozzarella cheese, parsley, black pepper, pine nuts, and lemon juice, mixing well to form the filling.
- Spread the cheese filling evenly over the bulgur layer, leaving a small border around the edges.
- Cover the filling with the remaining bulgur mixture, pressing down gently to seal the edges.
- Cut into squares or diamond shapes and place them on a greased baking sheet.
- Bake in a preheated oven at 180°C (350°F) for about 20 minutes or until golden brown.
- Serve warm, drizzled with a little extra olive oil or yogurt if desired.
