Ingredients

  • Fine bulgur wheat - 100 grams
  • Water - 200 milliliters
  • Salt - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Ground allspice - 1/2 teaspoon
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 50 grams, shredded
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 2 tablespoons, toasted
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine the fine bulgur wheat with water and salt, and let it soak for about 30 minutes until softened.
  2. In a skillet, heat olive oil over medium heat, add the chopped onion, and sauté until translucent.
  3. Once the bulgur has absorbed the water, mix in the sautéed onion, ground cinnamon, and ground allspice, and knead until smooth.
  4. Take half of the bulgur mixture and press it into a rectangular shape on a lightly oiled surface, about 1 cm thick.
  5. In a separate bowl, combine the feta cheese, mozzarella cheese, parsley, black pepper, pine nuts, and lemon juice, mixing well to form the filling.
  6. Spread the cheese filling evenly over the bulgur layer, leaving a small border around the edges.
  7. Cover the filling with the remaining bulgur mixture, pressing down gently to seal the edges.
  8. Cut into squares or diamond shapes and place them on a greased baking sheet.
  9. Bake in a preheated oven at 180°C (350°F) for about 20 minutes or until golden brown.
  10. Serve warm, drizzled with a little extra olive oil or yogurt if desired.
