- Lamb shoulder - 200 grams, boneless and cubed
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Sugar - 100 grams
- Water - 200 milliliters
- Lemon juice - 1 tablespoon
- Pine nuts - 20 grams, toasted
Steps
- Heat the olive oil in a medium pan over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
- Add the cubed lamb to the pan, seasoning with salt, black pepper, and cinnamon. Brown the meat on all sides for about 5-7 minutes.
- Pour in the water, cover the pan, and reduce the heat to low. Simmer for 30 minutes until the lamb is tender.
- In a separate small saucepan, combine sugar and 2 tablespoons of water over medium heat. Cook until the sugar dissolves and turns a light caramel color, about 5-7 minutes. Be careful not to burn it.
- Once the lamb is tender, stir in the caramel mixture and lemon juice, allowing it to cook for an additional 5 minutes to combine the flavors.
- Serve the Kharouf Bil Karamel garnished with toasted pine nuts.
