Ingredients

  • Lamb shoulder - 200 grams, boneless and cubed
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Sugar - 100 grams
  • Water - 200 milliliters
  • Lemon juice - 1 tablespoon
  • Pine nuts - 20 grams, toasted

Steps

  1. Heat the olive oil in a medium pan over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
  2. Add the cubed lamb to the pan, seasoning with salt, black pepper, and cinnamon. Brown the meat on all sides for about 5-7 minutes.
  3. Pour in the water, cover the pan, and reduce the heat to low. Simmer for 30 minutes until the lamb is tender.
  4. In a separate small saucepan, combine sugar and 2 tablespoons of water over medium heat. Cook until the sugar dissolves and turns a light caramel color, about 5-7 minutes. Be careful not to burn it.
  5. Once the lamb is tender, stir in the caramel mixture and lemon juice, allowing it to cook for an additional 5 minutes to combine the flavors.
  6. Serve the Kharouf Bil Karamel garnished with toasted pine nuts.
