Ingredients

  • Almonds - 50 grams
  • Walnuts - 50 grams
  • Sugar - 30 grams
  • Water - 100 ml
  • Rose water - 1 tablespoon
  • Cardamom powder - 1/2 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Pistachios - 20 grams, chopped (for garnish)

Steps

  1. Begin by finely grinding the almonds and walnuts together in a food processor until they reach a coarse flour-like consistency.
  2. In a small saucepan, combine water, sugar, rose water, cardamom powder, and cinnamon powder. Heat over medium heat, stirring until the sugar dissolves completely.
  3. Once the mixture comes to a gentle boil, reduce the heat and add the ground nut mixture, stirring continuously to combine.
  4. Cook the mixture for about 10-15 minutes, or until it thickens and starts to pull away from the sides of the pan.
  5. Remove from heat and let it cool slightly before transferring it to a greased dish or mold.
  6. Allow the Kharab to set at room temperature for about 1 hour, then refrigerate for an additional 30 minutes for better slicing.
  7. Cut into squares or desired shapes, and garnish with chopped pistachios before serving.
