Ingredients

  • Almond flour - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Cream cheese - 2 tablespoons
  • Egg - 1 large
  • Zaatar spice blend - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Cherry tomatoes (halved) - 1/2 cup
  • Feta cheese (crumbled) - 50 grams
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese, then microwave for 30 seconds. Stir and microwave again for another 30 seconds until fully melted.
  3. Add the almond flour, egg, salt, and pepper to the melted cheese mixture. Mix until a dough forms.
  4. Place the dough between two pieces of parchment paper and roll it out into a circle about 1/4 inch thick.
  5. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  6. Brush the surface of the dough with olive oil and sprinkle the zaatar spice blend evenly on top.
  7. Add the halved cherry tomatoes and crumbled feta cheese on top of the zaatar.
  8. Bake in the preheated oven for 15-20 minutes or until the crust is golden and crispy.
  9. Remove from the oven, sprinkle with fresh parsley, slice, and serve hot.
