- Almond flour - 1 cup
- Mozzarella cheese (shredded) - 1 cup
- Cream cheese - 2 tablespoons
- Egg - 1 large
- Zaatar spice blend - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Cherry tomatoes (halved) - 1/2 cup
- Feta cheese (crumbled) - 50 grams
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- In a microwave-safe bowl, combine the mozzarella cheese and cream cheese, then microwave for 30 seconds. Stir and microwave again for another 30 seconds until fully melted.
- Add the almond flour, egg, salt, and pepper to the melted cheese mixture. Mix until a dough forms.
- Place the dough between two pieces of parchment paper and roll it out into a circle about 1/4 inch thick.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- Brush the surface of the dough with olive oil and sprinkle the zaatar spice blend evenly on top.
- Add the halved cherry tomatoes and crumbled feta cheese on top of the zaatar.
- Bake in the preheated oven for 15-20 minutes or until the crust is golden and crispy.
- Remove from the oven, sprinkle with fresh parsley, slice, and serve hot.
