Ingredients

  • Almond flour - 150 grams
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Zaatar spice blend - 2 tablespoons
  • Salt - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Grated Parmesan cheese - 30 grams
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a bowl, combine almond flour, salt, garlic powder, and black pepper.
  2. Whisk together the eggs and olive oil in a separate bowl until well combined.
  3. Gradually add the egg mixture to the almond flour mixture, stirring to form a dough.
  4. Knead the dough lightly for a minute, then wrap it in plastic wrap and let it rest for 10 minutes.
  5. Preheat a non-stick skillet over medium heat.
  6. Roll out the dough between two sheets of parchment paper to about 1/4 inch thickness.
  7. Cut the rolled dough into desired pasta shapes (fettuccine, tagliatelle, etc.).
  8. Add the pasta shapes to the preheated skillet and cook for 3-4 minutes on each side until golden brown.
