Ingredients
- Zucchini - 2 medium, spiralized
- Chicken breast - 300 grams, diced
- Olive oil - 2 tablespoons
- Za'atar spice blend - 2 teaspoons
- Garlic - 2 cloves, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 150 grams, halved
- Parmesan cheese - 30 grams, grated (optional)
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced chicken breast to the skillet, season with salt, black pepper, and za'atar, and cook for about 7-10 minutes until the chicken is cooked through and browned.
- While the chicken is cooking, spiralize the zucchini into noodles and set aside.
- Once the chicken is cooked, add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
- Add the spiralized zucchini noodles to the skillet and drizzle with the remaining tablespoon of olive oil. Toss everything together and cook for an additional 2-3 minutes until the zucchini noodles are just tender.
- Remove from heat and serve warm, topped with grated Parmesan cheese and chopped fresh parsley.
