- Cauliflower - 200 grams (1 small head, riced)
- Fresh parsley - 50 grams (1 cup, finely chopped)
- Fresh mint - 15 grams (1/2 cup, finely chopped)
- Tomato - 100 grams (1 medium, diced)
- Cucumber - 100 grams (1 small, diced)
- Red onion - 30 grams (1/4 small, finely chopped)
- Olive oil - 30 ml (2 tablespoons)
- Lemon juice - 15 ml (1 tablespoon)
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Begin by ricing the cauliflower. Cut the cauliflower into florets and pulse in a food processor until it resembles rice grains.
- Transfer the riced cauliflower to a microwave-safe bowl and microwave for 3-4 minutes until tender. Let it cool.
- In a large mixing bowl, combine the cooled riced cauliflower, chopped parsley, mint, diced tomato, cucumber, and red onion.
