Ingredients

  • Cauliflower - 200 grams (1 small head, riced)
  • Fresh parsley - 50 grams (1 cup, finely chopped)
  • Fresh mint - 15 grams (1/2 cup, finely chopped)
  • Tomato - 100 grams (1 medium, diced)
  • Cucumber - 100 grams (1 small, diced)
  • Red onion - 30 grams (1/4 small, finely chopped)
  • Olive oil - 30 ml (2 tablespoons)
  • Lemon juice - 15 ml (1 tablespoon)
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Begin by ricing the cauliflower. Cut the cauliflower into florets and pulse in a food processor until it resembles rice grains.
  2. Transfer the riced cauliflower to a microwave-safe bowl and microwave for 3-4 minutes until tender. Let it cool.
  3. In a large mixing bowl, combine the cooled riced cauliflower, chopped parsley, mint, diced tomato, cucumber, and red onion.
