Ingredients

  • Riced cauliflower - 200 grams
  • Fresh parsley - 1 cup, chopped
  • Fresh mint - 1/2 cup, chopped
  • Cherry tomatoes - 100 grams, diced
  • Cucumber - 100 grams, diced
  • Red onion - 1/4 medium onion, finely chopped
  • Olive oil - 2 tablespoons
  • Fresh lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Prepare the riced cauliflower by steaming it for about 3-4 minutes until tender, then let it cool.
  2. In a large mixing bowl, combine the chopped parsley, mint, diced cherry tomatoes, diced cucumber, and finely chopped red onion.
  3. Add the cooled riced cauliflower to the bowl with the vegetables and herbs.
  4. In a small bowl, whisk together the olive oil, fresh lemon juice, salt, and black pepper.
  5. Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
  6. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.
