Steps
- Prepare the riced cauliflower by steaming it for about 3-4 minutes until tender, then let it cool.
- In a large mixing bowl, combine the chopped parsley, mint, diced cherry tomatoes, diced cucumber, and finely chopped red onion.
- Add the cooled riced cauliflower to the bowl with the vegetables and herbs.
- In a small bowl, whisk together the olive oil, fresh lemon juice, salt, and black pepper.
- Pour the dressing over the salad mixture and toss gently to combine all ingredients evenly.
