Ingredients
- Cauliflower - 200 grams
- Fresh parsley - 50 grams, finely chopped
- Fresh mint - 15 grams, finely chopped
- Tomato - 1 medium, diced (about 100 grams)
- Cucumber - 1 small, diced (about 100 grams)
- Green onion - 2 stalks, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Remove the leaves and stem from the cauliflower and cut it into florets.
- Using a food processor, pulse the cauliflower florets until they resemble rice or couscous in texture.
- Transfer the riced cauliflower to a microwave-safe bowl and microwave for 3-4 minutes until slightly soft. Let it cool.
- In a large mixing bowl, combine the cooled cauliflower, parsley, mint, tomato, cucumber, and green onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the cauliflower mixture and toss until everything is well combined.
