Ingredients

  • Cauliflower - 200 grams
  • Fresh parsley - 50 grams, finely chopped
  • Fresh mint - 15 grams, finely chopped
  • Tomato - 1 medium, diced (about 100 grams)
  • Cucumber - 1 small, diced (about 100 grams)
  • Green onion - 2 stalks, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Remove the leaves and stem from the cauliflower and cut it into florets.
  2. Using a food processor, pulse the cauliflower florets until they resemble rice or couscous in texture.
  3. Transfer the riced cauliflower to a microwave-safe bowl and microwave for 3-4 minutes until slightly soft. Let it cool.
  4. In a large mixing bowl, combine the cooled cauliflower, parsley, mint, tomato, cucumber, and green onion.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  6. Pour the dressing over the cauliflower mixture and toss until everything is well combined.
