Ingredients

  • Shirataki noodles - 200 grams
  • Fresh parsley - 1 cup, finely chopped
  • Fresh mint - 1/4 cup, finely chopped
  • Cherry tomatoes - 100 grams, diced
  • Cucumber - 1/2 medium, diced
  • Green onion - 2 stalks, sliced
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the shirataki noodles under cold water, then boil them in water for 2-3 minutes. Drain and set aside.
  2. In a large mixing bowl, combine the chopped parsley, mint, diced cherry tomatoes, cucumber, and green onion.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  4. Add the cooked shirataki noodles to the mixing bowl with the vegetables.
