Ingredients

  • Cauliflower rice - 200 grams
  • Fresh parsley, finely chopped - 50 grams
  • Fresh mint leaves, finely chopped - 20 grams
  • Cherry tomatoes, diced - 100 grams
  • Cucumber, diced - 100 grams
  • Green onion, finely sliced - 2 stalks
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a food processor, pulse the cauliflower florets until they resemble rice grains. If you don't have a food processor, you can use a grater.
  2. In a large mixing bowl, combine the cauliflower rice, chopped parsley, mint, diced cherry tomatoes, cucumber, and green onion.
  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  4. Pour the dressing over the cauliflower mixture and toss well to combine all ingredients thoroughly.
