Ingredients

  • 2 medium zucchinis
  • 200 grams ground beef or lamb
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 100 grams diced tomatoes (fresh or canned)
  • 50 grams crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center for the filling. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Add the ground beef or lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  6. Stir in the ground cumin, ground coriander, cinnamon, salt, and pepper. Mix well.
  7. Add the diced tomatoes to the meat mixture and cook for another 2-3 minutes until heated through.
  8. Remove the skillet from heat and stir in the crumbled feta cheese and chopped parsley.
  9. Fill each zucchini half with the meat mixture and place them in a baking dish.
  10. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  11. Remove the foil and bake for an additional 10-15 minutes, until the zucchinis are tender and the filling is heated through.
  12. Serve warm, garnished with additional parsley if desired.
