- 2 medium zucchinis
- 200 grams ground beef or lamb
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 100 grams diced tomatoes (fresh or canned)
- 50 grams crumbled feta cheese
- 2 tablespoons chopped fresh parsley
Steps
- Preheat your oven to 180°C (350°F).
- Cut the zucchinis in half lengthwise and scoop out the seeds to create a hollow center for the filling. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef or lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the ground cumin, ground coriander, cinnamon, salt, and pepper. Mix well.
- Add the diced tomatoes to the meat mixture and cook for another 2-3 minutes until heated through.
- Remove the skillet from heat and stir in the crumbled feta cheese and chopped parsley.
- Fill each zucchini half with the meat mixture and place them in a baking dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the zucchinis are tender and the filling is heated through.
- Serve warm, garnished with additional parsley if desired.
