Ingredients

  • 2 medium bell peppers (any color)
  • 200 grams ground beef or lamb
  • 50 grams walnuts, finely chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the ground beef or lamb to the skillet and cook until browned, breaking it apart with a spoon.
  5. Stir in the chopped walnuts, cumin, coriander, paprika, salt, and pepper. Cook for an additional 5 minutes, then remove from heat and mix in the chopped parsley.
  6. Stuff the bell peppers with the meat mixture, pressing down to pack it tightly.
  7. Place the stuffed peppers upright in a baking dish. If desired, drizzle with a little more olive oil.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes to brown the tops.
  9. Once cooked, remove from the oven and let cool for a few minutes before serving.
