Ingredients
- 2 medium bell peppers (any color)
- 200 grams ground beef or lamb
- 50 grams walnuts, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
Steps
- Preheat the oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the ground beef or lamb to the skillet and cook until browned, breaking it apart with a spoon.
- Stir in the chopped walnuts, cumin, coriander, paprika, salt, and pepper. Cook for an additional 5 minutes, then remove from heat and mix in the chopped parsley.
- Stuff the bell peppers with the meat mixture, pressing down to pack it tightly.
- Place the stuffed peppers upright in a baking dish. If desired, drizzle with a little more olive oil.
- Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes to brown the tops.
- Once cooked, remove from the oven and let cool for a few minutes before serving.
