Ingredients
- Grape leaves - 200 grams
- Cauliflower rice - 200 grams
- Ground lamb or beef - 150 grams
- Onion, finely chopped - 1 small (about 70 grams)
- Garlic cloves, minced - 2
- Fresh parsley, chopped - 2 tablespoons
- Fresh mint, chopped - 2 tablespoons
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Ground cinnamon - 1/4 teaspoon
- Pine nuts (optional) - 2 tablespoons
Steps
- Rinse the grape leaves in cold water and set them aside to drain.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for another minute until fragrant.
- In a mixing bowl, combine the cooked onion and garlic with cauliflower rice, ground meat, parsley, mint, lemon juice, salt, black pepper, and cinnamon. Mix well until all ingredients are evenly combined.
- Lay a grape leaf on a flat surface, shiny side down. Place about 1 tablespoon of the filling near the stem end of the leaf, fold the sides over the filling, and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.
- In a large pot, layer any leftover grape leaves on the bottom to prevent sticking. Arrange the stuffed grape leaves seam side down in the pot, packing them tightly.
- Drizzle the remaining olive oil over the top and cover with water (about 1 cup). Place a plate on top to keep them submerged while cooking.
- Cover the pot and simmer on low heat for about 45-50 minutes until the leaves are tender and the filling is cooked through.
- Once cooked, let them rest for 10 minutes before serving. Enjoy warm or at room temperature.
