Ingredients

  • Almond flour - 1 cup
  • Coconut oil - 3 tablespoons (melted)
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Fresh spinach - 200 grams (roughly chopped)
  • Feta cheese - 100 grams (crumbled)
  • Cream cheese - 50 grams (softened)
  • Garlic - 2 cloves (minced)
  • Black pepper - 1/4 teaspoon
  • Nutmeg - 1/4 teaspoon
  • Egg - 1 large (for egg wash)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, one egg, and salt to form a dough.
  3. Press the dough into a greased 9-inch pie dish evenly across the bottom and up the sides. Poke holes with a fork to prevent bubbling.
  4. In a skillet over medium heat, sauté the minced garlic until fragrant, then add the chopped spinach. Cook until wilted, about 3-4 minutes.
  5. In a separate bowl, mix the crumbled feta, softened cream cheese, cooked spinach, black pepper, and nutmeg until well combined.
