Ingredients
- Almond flour - 200 grams
- Psyllium husk powder - 2 tablespoons
- Egg - 1 large
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Water - 100 ml
- Fresh spinach - 150 grams, chopped
- Onion - 1 small, finely chopped
- Feta cheese - 50 grams, crumbled
- Lemon juice - 1 tablespoon
- Dried mint - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- In a bowl, combine almond flour, psyllium husk powder, salt, olive oil, and egg. Mix until a dough forms.
- Gradually add water until the dough is smooth and pliable. Cover with plastic wrap and let it rest for 15 minutes.
- In a skillet, heat a tablespoon of olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Add chopped spinach to the skillet, cooking until wilted, about 3 minutes. Remove from heat.
- Stir in feta cheese, lemon juice, dried mint, and black pepper. Mix well and let the filling cool.
- Preheat the oven to 180°C (350°F).
- Divide the dough into 4 equal portions. Roll each portion into a circle about 1/4 inch thick.
- Place a tablespoon of the spinach filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
- Place the fatayers on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
