Ingredients

  • Almond flour - 200 grams
  • Psyllium husk powder - 2 tablespoons
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Water - 100 ml
  • Fresh spinach - 150 grams, chopped
  • Onion - 1 small, finely chopped
  • Feta cheese - 50 grams, crumbled
  • Lemon juice - 1 tablespoon
  • Dried mint - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. In a bowl, combine almond flour, psyllium husk powder, salt, olive oil, and egg. Mix until a dough forms.
  2. Gradually add water until the dough is smooth and pliable. Cover with plastic wrap and let it rest for 15 minutes.
  3. In a skillet, heat a tablespoon of olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  4. Add chopped spinach to the skillet, cooking until wilted, about 3 minutes. Remove from heat.
  5. Stir in feta cheese, lemon juice, dried mint, and black pepper. Mix well and let the filling cool.
  6. Preheat the oven to 180°C (350°F).
  7. Divide the dough into 4 equal portions. Roll each portion into a circle about 1/4 inch thick.
  8. Place a tablespoon of the spinach filling in the center of each circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
  9. Place the fatayers on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
