- Ground lamb - 250 grams
- Zucchini - 2 medium-sized (about 300 grams total)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Tomato paste - 2 tablespoons
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Pine nuts - 2 tablespoons, toasted (optional)
Steps
- Spiralize the zucchini into zoodles using a spiralizer or julienne peeler and set aside.
- In a large skillet, heat the olive oil over medium heat, then add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the ground lamb to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the tomato paste, paprika, cinnamon, cumin, salt, and black pepper. Mix well and let it cook for another 3-4 minutes until the spices are fragrant.
- Add the zoodles to the skillet, tossing them with the lamb mixture. Cook for an additional 3-5 minutes until the zoodles are just tender.
- Remove from heat and stir in the fresh parsley and lemon juice. Adjust seasoning if necessary.
- Serve hot, topped with toasted pine nuts if desired.
