Ingredients
- Cauliflower - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Remove the leaves from the cauliflower and cut it into florets. Place the florets into a food processor and pulse until it resembles rice.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
- Stir in the cumin, coriander, paprika, turmeric, salt, and black pepper, and cook for another minute to bloom the spices.
- Add the riced cauliflower to the skillet and mix well, cooking for about 5-7 minutes until the cauliflower is tender.
- Transfer the cauliflower mixture to a baking dish and spread evenly. Bake in the preheated oven for 10-15 minutes until slightly crispy on top.
- Remove from the oven and sprinkle the toasted pine nuts and chopped parsley over the top.
- Drizzle with fresh lemon juice before serving.
