Ingredients

  • Cauliflower - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Remove the leaves from the cauliflower and cut it into florets. Place the florets into a food processor and pulse until it resembles rice.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  5. Stir in the cumin, coriander, paprika, turmeric, salt, and black pepper, and cook for another minute to bloom the spices.
  6. Add the riced cauliflower to the skillet and mix well, cooking for about 5-7 minutes until the cauliflower is tender.
  7. Transfer the cauliflower mixture to a baking dish and spread evenly. Bake in the preheated oven for 10-15 minutes until slightly crispy on top.
  8. Remove from the oven and sprinkle the toasted pine nuts and chopped parsley over the top.
  9. Drizzle with fresh lemon juice before serving.
