Ingredients

  • Yogurt - 60 grams

  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 2
  • Cauliflower - 300 grams
  • Butter - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pine nuts - 2 tablespoons, toasted

Steps

  1. In a bowl, mix yogurt, olive oil, minced garlic, lemon juice, cumin, paprika, salt, and black pepper to create a marinade.
  2. Cut the chicken breast into bite-sized pieces and add to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes.
  3. While the chicken marinates, prepare the cauliflower rice by grating the cauliflower or processing it in a food processor until it resembles rice grains.
