Ingredients
- Almond flour - 150g
- Mozzarella cheese (shredded) - 100g
- Cream cheese - 50g
- Egg - 1 large
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Olive oil - 1 tbsp
- Bell pepper (diced) - 1/2 medium
- Onion (diced) - 1/2 medium
- Garlic (minced) - 1 clove
- Canned diced tomatoes - 200g
- Cumin - 1 tsp
- Paprika - 1 tsp
- Chili powder - 1/2 tsp
- Eggs - 4 large
- Fresh parsley (chopped) - 2 tbsp
- Feta cheese (crumbled) - 50g
Steps
- Preheat the oven to 220°C (425°F).
- In a bowl, mix almond flour, shredded mozzarella, cream cheese, egg, baking powder, and salt until a dough forms.
- Spread the dough onto a parchment-lined baking sheet into a round pizza shape about 0.5 cm thick.
- Bake the pizza base in the preheated oven for 10-12 minutes or until golden brown.
- Meanwhile, in a skillet, heat olive oil over medium heat and sauté diced onion and bell pepper until soft, about 5 minutes.
- Add minced garlic, canned diced tomatoes, cumin, paprika, and chili powder to the skillet, stirring well and simmering for about 5 minutes.
- Once the pizza base is done, remove it from the oven and spread the shakshuka mixture evenly over the top.
- Make four small wells in the shakshuka mixture and crack an egg into each well.
- Return the pizza to the oven and bake for an additional 8-10 minutes, or until the egg whites are set but yolks remain runny.
- Remove from the oven, sprinkle with chopped parsley and crumbled feta cheese before serving.
