Ingredients

  • Almond flour - 150g
  • Mozzarella cheese (shredded) - 100g
  • Cream cheese - 50g
  • Egg - 1 large
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Olive oil - 1 tbsp
  • Bell pepper (diced) - 1/2 medium
  • Onion (diced) - 1/2 medium
  • Garlic (minced) - 1 clove
  • Canned diced tomatoes - 200g
  • Cumin - 1 tsp
  • Paprika - 1 tsp
  • Chili powder - 1/2 tsp
  • Eggs - 4 large
  • Fresh parsley (chopped) - 2 tbsp
  • Feta cheese (crumbled) - 50g

Steps

  1. Preheat the oven to 220°C (425°F).
  2. In a bowl, mix almond flour, shredded mozzarella, cream cheese, egg, baking powder, and salt until a dough forms.
  3. Spread the dough onto a parchment-lined baking sheet into a round pizza shape about 0.5 cm thick.
  4. Bake the pizza base in the preheated oven for 10-12 minutes or until golden brown.
  5. Meanwhile, in a skillet, heat olive oil over medium heat and sauté diced onion and bell pepper until soft, about 5 minutes.
  6. Add minced garlic, canned diced tomatoes, cumin, paprika, and chili powder to the skillet, stirring well and simmering for about 5 minutes.
  7. Once the pizza base is done, remove it from the oven and spread the shakshuka mixture evenly over the top.
  8. Make four small wells in the shakshuka mixture and crack an egg into each well.
  9. Return the pizza to the oven and bake for an additional 8-10 minutes, or until the egg whites are set but yolks remain runny.
  10. Remove from the oven, sprinkle with chopped parsley and crumbled feta cheese before serving.
