Ingredients

  • Coconut flour - 50g
  • Almond flour - 30g
  • Baking powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Erythritol - 30g
  • Eggs - 2 large
  • Unsweetened almond milk - 60ml
  • Vanilla extract - 1 tsp
  • Melted coconut oil - 30g
  • Pistachios - 10g (for topping, optional)

Steps

  1. Preheat the oven to 180°C (350°F) and grease a small baking dish.
  2. In a mixing bowl, combine coconut flour, almond flour, baking powder, turmeric powder, and erythritol.
  3. In a separate bowl, whisk together the eggs, almond milk, vanilla extract, and melted coconut oil until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Sprinkle chopped pistachios on top if desired.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
