Ingredients

  • Almond milk - 400 ml
  • Coconut flour - 2 tablespoons
  • Xylitol or erythritol - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Chopped pistachios - 2 tablespoons
  • Unsweetened shredded coconut - 1 tablespoon
  • Water - 50 ml

Steps

  1. In a saucepan, combine almond milk and water, and heat over medium heat until warm.
  2. In a small bowl, mix coconut flour, xylitol (or erythritol), and ground cinnamon.
  3. Slowly whisk the dry mixture into the warm almond milk, stirring constantly to avoid lumps.
  4. Continue to cook on medium heat, stirring frequently, until the mixture thickens to a pudding-like consistency (about 5-7 minutes).
  5. Remove from heat and stir in vanilla extract.
  6. Divide the mixture into two serving bowls.
  7. Top each bowl with chopped pistachios and unsweetened shredded coconut.
  8. Sprinkle additional ground cinnamon on top for garnish, if desired.
