- Unsweetened shredded coconut - 1 tablespoon
- Water - 50 ml
Steps
- In a saucepan, combine almond milk and water, and heat over medium heat until warm.
- In a small bowl, mix coconut flour, xylitol (or erythritol), and ground cinnamon.
- Slowly whisk the dry mixture into the warm almond milk, stirring constantly to avoid lumps.
- Continue to cook on medium heat, stirring frequently, until the mixture thickens to a pudding-like consistency (about 5-7 minutes).
- Remove from heat and stir in vanilla extract.
- Divide the mixture into two serving bowls.
- Top each bowl with chopped pistachios and unsweetened shredded coconut.
