Ingredients

  • Cauliflower - 400 grams
  • Chicken thighs, boneless and skinless - 300 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 2 cloves
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse and chop the cauliflower into florets, then pulse in a food processor until it resembles rice grains.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Season the chicken thighs with cumin, coriander, cinnamon, salt, and black pepper. Add to the skillet and cook for 6-8 minutes on each side until browned and cooked through.
  5. Remove the chicken from the skillet and set aside. In the same skillet, add the cauliflower rice and chicken broth. Stir to combine.
  6. Cover and simmer the cauliflower rice over low heat for about 10 minutes until tender and most of the liquid is absorbed.
  7. While the cauliflower is cooking, chop the cooked chicken into bite-sized pieces.
  8. Once the cauliflower rice is ready, stir in the chicken pieces, chopped parsley, and lemon juice. Mix well to combine.
  9. Serve hot, garnished with additional parsley if desired.
