Ingredients
- Cauliflower - 400 grams
- Chicken thighs, boneless and skinless - 300 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic, minced - 2 cloves
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 250 ml
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
Steps
- Rinse and chop the cauliflower into florets, then pulse in a food processor until it resembles rice grains.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic to the skillet and cook for an additional minute until fragrant.
- Season the chicken thighs with cumin, coriander, cinnamon, salt, and black pepper. Add to the skillet and cook for 6-8 minutes on each side until browned and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add the cauliflower rice and chicken broth. Stir to combine.
- Cover and simmer the cauliflower rice over low heat for about 10 minutes until tender and most of the liquid is absorbed.
- While the cauliflower is cooking, chop the cooked chicken into bite-sized pieces.
- Once the cauliflower rice is ready, stir in the chicken pieces, chopped parsley, and lemon juice. Mix well to combine.
- Serve hot, garnished with additional parsley if desired.
