- Cauliflower - 300 grams
- Greek yogurt - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Remove the leaves and stem from the cauliflower, then chop it into florets.
- Using a food processor, pulse the cauliflower until it resembles rice grains.
- In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the riced cauliflower to the skillet, along with cumin, coriander, salt, and black pepper. Stir well to combine.
- Cook the cauliflower rice for about 10-12 minutes, stirring occasionally, until tender and slightly golden.
- While the cauliflower is cooking, prepare the yogurt sauce by mixing Greek yogurt, lemon juice, and chopped parsley in a bowl. Season with additional salt if needed.
