Ingredients

  • Cauliflower rice - 200 grams
  • Olive oil - 2 tablespoons
  • Pine nuts - 30 grams
  • Almonds (sliced) - 30 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Cardamom - 1/4 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the pine nuts and sliced almonds, sautéing until they are golden brown, about 3-4 minutes. Remove them from the pan and set aside.
  3. In the same saucepan, add the cauliflower rice, salt, black pepper, cinnamon, and cardamom. Stir to combine.
  4. Pour in the vegetable broth and bring to a simmer. Cover the pan and cook for about 10-12 minutes, or until the cauliflower rice is tender and the liquid has absorbed.
  5. Once cooked, fluff the cauliflower rice with a fork and stir in the sautéed nuts and chopped parsley.
  6. Serve warm as a side dish or a main dish.
