Ingredients
- Cauliflower rice - 200 grams
- Olive oil - 2 tablespoons
- Pine nuts - 30 grams
- Almonds (sliced) - 30 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cinnamon - 1/4 teaspoon
- Cardamom - 1/4 teaspoon
- Vegetable broth - 250 ml
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the pine nuts and sliced almonds, sautéing until they are golden brown, about 3-4 minutes. Remove them from the pan and set aside.
- In the same saucepan, add the cauliflower rice, salt, black pepper, cinnamon, and cardamom. Stir to combine.
- Pour in the vegetable broth and bring to a simmer. Cover the pan and cook for about 10-12 minutes, or until the cauliflower rice is tender and the liquid has absorbed.
- Once cooked, fluff the cauliflower rice with a fork and stir in the sautéed nuts and chopped parsley.
