Ingredients
- Cauliflower - 300 grams, grated
- Green lentils - 100 grams, rinsed and drained
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Vegetable broth - 500 milliliters
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the green lentils, cumin, cinnamon, salt, and black pepper. Mix well to coat the lentils with the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the lentils are tender.
- While the lentils are cooking, in a separate skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the grated cauliflower and sauté for about 5-7 minutes until tender and slightly golden.
- Once the lentils are cooked, drain any excess liquid if necessary and combine them with the sautéed cauliflower rice. Mix thoroughly.
- Serve warm, garnished with fresh chopped parsley.
