Ingredients

  • Cauliflower - 300 grams, grated
  • Green lentils - 100 grams, rinsed and drained
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 500 milliliters
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the green lentils, cumin, cinnamon, salt, and black pepper. Mix well to coat the lentils with the spices.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the lentils are tender.
  5. While the lentils are cooking, in a separate skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the grated cauliflower and sauté for about 5-7 minutes until tender and slightly golden.
  6. Once the lentils are cooked, drain any excess liquid if necessary and combine them with the sautéed cauliflower rice. Mix thoroughly.
  7. Serve warm, garnished with fresh chopped parsley.
