Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, finely chopped
  • Parsley - 2 tablespoons, chopped
  • Mint - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. Remove the leaves and stem from the cauliflower, then cut it into florets.
  2. In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
  3. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  4. Add the cauliflower rice to the skillet, stirring to combine with the onion and garlic mixture.
  5. Sprinkle in the cumin, salt, and black pepper, mixing well. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
  6. Remove the skillet from heat and stir in the chopped parsley, mint, and lemon juice.
