- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 small, finely chopped
- Parsley - 2 tablespoons, chopped
- Mint - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
Steps
- Remove the leaves and stem from the cauliflower, then cut it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the cauliflower rice to the skillet, stirring to combine with the onion and garlic mixture.
- Sprinkle in the cumin, salt, and black pepper, mixing well. Cook for another 5-7 minutes, stirring occasionally, until the cauliflower is tender.
- Remove the skillet from heat and stir in the chopped parsley, mint, and lemon juice.
