Ingredients
- 2 large bell peppers (any color) - 300g
- 150g cauliflower rice
- 100g ground beef (or lamb)
- 1 small onion, finely chopped - 70g
- 2 cloves garlic, minced - 6g
- 1 teaspoon ground cumin - 2g
- 1 teaspoon ground coriander - 2g
- 1/2 teaspoon paprika - 1g
- Salt to taste - 2g
- Black pepper to taste - 1g
- 2 tablespoons olive oil - 30ml
- 1 tablespoon fresh parsley, chopped - 5g
- 1 tablespoon lemon juice - 15ml
Steps
- Preheat your oven to 180°C (350°F).
- Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the ground beef (or lamb) and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Add the cauliflower rice, cumin, coriander, paprika, salt, and black pepper to the skillet. Mix well and cook for another 5 minutes until everything is heated through.
- Remove the skillet from heat and stir in the chopped parsley and lemon juice.
- Stuff each bell pepper with the cauliflower rice and meat mixture, packing it down gently.
- Place the stuffed peppers upright in a baking dish. If there is any leftover filling, it can be added around the peppers.
- Cover the dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the peppers are tender and slightly charred on top.
- Let cool for a few minutes before serving.
