Ingredients

  • Cauliflower rice - 300 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 milliliters
  • Toasted almonds - 30 grams, chopped
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the cauliflower rice to the skillet and mix well with the onion and garlic.
  4. Sprinkle in the cinnamon, allspice, salt, and black pepper, stirring to coat the cauliflower rice evenly.
  5. Pour the vegetable broth into the skillet, bring to a simmer, and cover. Cook for 10-12 minutes until the cauliflower is tender and has absorbed most of the liquid.
  6. Remove the lid, fluff the rice with a fork, and let it cook uncovered for another 2-3 minutes to evaporate any excess liquid.
  7. Remove from heat and stir in the chopped toasted almonds.
  8. Serve hot, garnished with fresh parsley.
