Ingredients
- Cauliflower rice - 300 grams
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cinnamon - 1/2 teaspoon
- Allspice - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable broth - 250 milliliters
- Toasted almonds - 30 grams, chopped
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the cauliflower rice to the skillet and mix well with the onion and garlic.
- Sprinkle in the cinnamon, allspice, salt, and black pepper, stirring to coat the cauliflower rice evenly.
- Pour the vegetable broth into the skillet, bring to a simmer, and cover. Cook for 10-12 minutes until the cauliflower is tender and has absorbed most of the liquid.
- Remove the lid, fluff the rice with a fork, and let it cook uncovered for another 2-3 minutes to evaporate any excess liquid.
- Remove from heat and stir in the chopped toasted almonds.
- Serve hot, garnished with fresh parsley.
