Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Pomegranate juice - 100 ml, unsweetened
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh pomegranate seeds - 50 grams, for garnish
  • Fresh parsley - a handful, chopped for garnish

Steps

  1. In a bowl, combine the pomegranate juice, olive oil, minced garlic, grated ginger, cumin powder, cinnamon powder, salt, and black pepper. Mix well to create a marinade.
  2. Add the chicken thighs to the marinade and coat them thoroughly. Cover and let it marinate in the refrigerator for at least 15 minutes.
  3. Heat a large skillet over medium heat. Once hot, add the marinated chicken thighs to the skillet, cooking for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden color.
  4. Remove the chicken from the skillet and let it rest for a few minutes. Meanwhile, pour the remaining marinade into the skillet and simmer for 3-5 minutes until slightly thickened.
  5. Slice the chicken thighs and serve them drizzled with the thickened sauce. Garnish with fresh pomegranate seeds and chopped parsley.
