- Chicken thighs - 400 grams, boneless and skinless
- Pomegranate juice - 100 ml, unsweetened
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Cumin powder - 1 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh pomegranate seeds - 50 grams, for garnish
- Fresh parsley - a handful, chopped for garnish
Steps
- In a bowl, combine the pomegranate juice, olive oil, minced garlic, grated ginger, cumin powder, cinnamon powder, salt, and black pepper. Mix well to create a marinade.
- Add the chicken thighs to the marinade and coat them thoroughly. Cover and let it marinate in the refrigerator for at least 15 minutes.
- Heat a large skillet over medium heat. Once hot, add the marinated chicken thighs to the skillet, cooking for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden color.
- Remove the chicken from the skillet and let it rest for a few minutes. Meanwhile, pour the remaining marinade into the skillet and simmer for 3-5 minutes until slightly thickened.
- Slice the chicken thighs and serve them drizzled with the thickened sauce. Garnish with fresh pomegranate seeds and chopped parsley.
