Ingredients

  • Zucchini - 2 medium (about 400g)
  • Green lentils - 50g (dry)
  • Onion - 1 medium (about 150g)
  • Olive oil - 2 tablespoons (30ml)
  • Ground cumin - 1 teaspoon (5g)
  • Ground coriander - 1 teaspoon (5g)
  • Salt - 1/2 teaspoon (3g)
  • Black pepper - 1/4 teaspoon (1g)
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped (optional for garnish)

Steps

  1. Rinse the lentils under cold water and cook in a saucepan with 300ml of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until tender. Drain and set aside.
  2. While the lentils are cooking, spiralize the zucchini using a spiralizer or julienne peeler to create 'pasta'.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook for about 10 minutes, stirring occasionally, until they are caramelized and golden brown.
  4. Add the minced garlic, ground cumin, ground coriander, salt, and black pepper to the skillet, and cook for an additional 1-2 minutes until fragrant.
  5. Add the cooked lentils and zucchini pasta to the skillet, tossing everything together until the zucchini is just tender, about 3-4 minutes.
  6. Serve warm, garnished with chopped parsley if desired.
