Ingredients
- Zucchini - 2 medium (about 400g)
- Green lentils - 50g (dry)
- Onion - 1 medium (about 150g)
- Olive oil - 2 tablespoons (30ml)
- Ground cumin - 1 teaspoon (5g)
- Ground coriander - 1 teaspoon (5g)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped (optional for garnish)
Steps
- Rinse the lentils under cold water and cook in a saucepan with 300ml of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until tender. Drain and set aside.
- While the lentils are cooking, spiralize the zucchini using a spiralizer or julienne peeler to create 'pasta'.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook for about 10 minutes, stirring occasionally, until they are caramelized and golden brown.
- Add the minced garlic, ground cumin, ground coriander, salt, and black pepper to the skillet, and cook for an additional 1-2 minutes until fragrant.
- Add the cooked lentils and zucchini pasta to the skillet, tossing everything together until the zucchini is just tender, about 3-4 minutes.
- Serve warm, garnished with chopped parsley if desired.
