Ingredients

  • Cauliflower - 400 grams, riced
  • Green Lentils - 100 grams, cooked and drained
  • Large Onion - 1, thinly sliced
  • Olive Oil - 3 tablespoons
  • Ground Cumin - 1 teaspoon
  • Ground Coriander - 1 teaspoon
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Fresh Parsley - 2 tablespoons, chopped for garnish

Steps

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced onions and cook until they are caramelized, about 10-15 minutes, stirring occasionally.
  2. Once the onions are golden brown and caramelized, remove half of them from the skillet and set aside for garnish.
  3. In the same skillet with the remaining onions, add the cooked lentils, riced cauliflower, cumin, coriander, salt, and pepper. Stir well to combine and cook for another 10 minutes, allowing the flavors to meld together.
  4. Add a splash of water if needed to prevent sticking, and cook until the cauliflower is tender.
  5. Serve warm, topped with the reserved caramelized onions and garnished with fresh parsley.
