- Roasted red bell peppers - 120 grams (1 medium pepper)
- Walnuts - 60 grams
- Extra virgin olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Ground cumin - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Water - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- Place walnuts on a baking sheet and roast in the oven for 8-10 minutes until fragrant and lightly browned, stirring halfway through.
- Remove the walnuts from the oven and allow them to cool.
- In a blender or food processor, combine roasted red bell peppers, cooled walnuts, olive oil, minced garlic, ground cumin, paprika, salt, lemon juice, and water.
- Blend until smooth and creamy, scraping down the sides as needed.
- Taste and adjust seasoning if necessary, adding more salt or lemon juice to your liking.
