Ingredients

  • Eggplant - 1 medium (about 300g)
  • Ground beef - 250g
  • Onion - 1 medium, chopped (about 100g)
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Heavy cream - 100ml
  • Egg - 1 large
  • Grated Parmesan cheese - 50g
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out moisture.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the chopped onion until translucent, about 5 minutes.
  4. Add the minced garlic and ground beef to the skillet. Cook until the beef is browned and cooked through, about 7-10 minutes.
  5. Stir in the tomato paste, cinnamon, allspice, salt, and black pepper. Cook for another 2-3 minutes, then remove from heat.
  6. Rinse the salted eggplant slices and pat them dry with paper towels. In a separate skillet, heat the remaining tablespoon of olive oil over medium heat and lightly fry the eggplant slices until golden, about 2-3 minutes per side. Drain on paper towels.
  7. In a bowl, whisk together the heavy cream, egg, and grated Parmesan cheese until smooth. Season with a pinch of salt and pepper.
  8. In a baking dish, layer half of the eggplant slices on the bottom. Spread the beef mixture over the eggplant, followed by the remaining eggplant slices. Pour the cream mixture evenly over the top.
  9. Bake in the preheated oven for 30 minutes, or until the top is golden and bubbly.
  10. Allow to cool for a few minutes before garnishing with fresh parsley and serving.
