Ingredients
- Green lentils - 100 grams
- Walnuts, chopped - 50 grams
- Coconut flour - 30 grams
- Erythritol or monk fruit sweetener - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Salt - a pinch
- Water - 300 milliliters
- Coconut oil - 1 tablespoon
- Vanilla extract - 1 teaspoon
Steps
- Rinse the green lentils under cold water and place them in a saucepan with 300 milliliters of water. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until tender. Drain any excess water.
- In a mixing bowl, combine the cooked lentils, chopped walnuts, coconut flour, erythritol, cardamom powder, cinnamon powder, and a pinch of salt. Mix well until all ingredients are well incorporated.
- In a skillet, heat the coconut oil over medium heat. Add the lentil mixture to the skillet and press it down into an even layer. Cook for about 5-7 minutes until the bottom is golden brown.
- Carefully flip the lentil mixture using a large spatula, cooking the other side for an additional 5-7 minutes until golden brown.
- Remove from heat and let it cool for a few minutes. Drizzle with vanilla extract before serving.
