Ingredients

  • Almond milk - 400 ml
  • Xylitol or erythritol - 2 tablespoons
  • Agar-agar powder - 1 teaspoon
  • Rose water - 1 teaspoon
  • Vanilla extract - 1/2 teaspoon
  • Chopped pistachios - 2 tablespoons for garnish

Steps

  1. In a saucepan, combine the almond milk and xylitol (or erythritol) and heat over medium heat until warm, stirring to dissolve the sweetener.
  2. Sprinkle the agar-agar powder over the warm mixture and whisk continuously until fully dissolved.
  3. Bring the mixture to a gentle boil, then reduce the heat and simmer for 5 minutes while stirring.
  4. Remove from heat and stir in the rose water and vanilla extract.
  5. Pour the mixture into two small serving cups or bowls and allow to cool slightly.
  6. Refrigerate for at least 2 hours or until set.
