Ingredients

  • Almond flour - 150 grams
  • Psyllium husk powder - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Water - 120 ml
  • Olive oil - 2 tablespoons
  • Za'atar spice blend - 2 tablespoons
  • Cheese (mozzarella or goat cheese) - 100 grams

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
  3. Add water and 1 tablespoon of olive oil to the dry ingredients, and mix until a dough forms.
  4. Knead the dough for a few minutes until smooth, then divide it into two equal portions.
  5. Roll each portion into a flat circle, about 1/2 cm thick, on a piece of parchment paper.
  6. Transfer the rolled dough onto the prepared baking sheet.
  7. In a small bowl, mix the za'atar with the remaining tablespoon of olive oil to form a paste.
  8. Spread the za'atar mixture evenly over the top of each dough circle.
  9. Sprinkle the cheese over the za'atar topping.
  10. Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the cheese is melted.
  11. Remove from the oven and let cool for a few minutes before slicing and serving.
