Ingredients
- Almond flour - 150 grams
- Psyllium husk powder - 1 tablespoon
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Water - 120 ml
- Olive oil - 2 tablespoons
- Za'atar spice blend - 2 tablespoons
- Cheese (mozzarella or goat cheese) - 100 grams
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
- Add water and 1 tablespoon of olive oil to the dry ingredients, and mix until a dough forms.
- Knead the dough for a few minutes until smooth, then divide it into two equal portions.
- Roll each portion into a flat circle, about 1/2 cm thick, on a piece of parchment paper.
- Transfer the rolled dough onto the prepared baking sheet.
- In a small bowl, mix the za'atar with the remaining tablespoon of olive oil to form a paste.
- Spread the za'atar mixture evenly over the top of each dough circle.
- Sprinkle the cheese over the za'atar topping.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the cheese is melted.
- Remove from the oven and let cool for a few minutes before slicing and serving.
