Ingredients

  • Almond flour - 100 grams
  • Coconut oil - 30 grams, melted
  • Erythritol - 20 grams
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Walnuts - 50 grams, finely chopped
  • Dried dates - 30 grams, chopped
  • Cardamom powder - 1/4 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted coconut oil, erythritol, egg, vanilla extract, and salt. Mix until a dough forms.
  3. In another bowl, combine chopped walnuts, chopped dates, and cardamom powder to create the filling.
  4. Divide the dough into equal portions (about 20 grams each) and flatten each piece in your palm.
  5. Place a small amount of the filling (about 1 teaspoon) in the center of each flattened dough piece and fold the edges over to seal the filling inside.
  6. Shape the filled dough into a ball and slightly flatten it. Repeat with all portions.
  7. Place the shaped maamoul on a baking sheet lined with parchment paper, leaving space between each cookie.
  8. Bake in the preheated oven for 15-20 minutes or until golden brown.
  9. Remove from oven and let cool for a few minutes before serving.
