Ingredients
- Almond flour - 100 grams
- Coconut oil - 30 grams, melted
- Erythritol - 20 grams
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Salt - 1/4 teaspoon
- Walnuts - 50 grams, finely chopped
- Dried dates - 30 grams, chopped
- Cardamom powder - 1/4 teaspoon
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, erythritol, egg, vanilla extract, and salt. Mix until a dough forms.
- In another bowl, combine chopped walnuts, chopped dates, and cardamom powder to create the filling.
- Divide the dough into equal portions (about 20 grams each) and flatten each piece in your palm.
- Place a small amount of the filling (about 1 teaspoon) in the center of each flattened dough piece and fold the edges over to seal the filling inside.
- Shape the filled dough into a ball and slightly flatten it. Repeat with all portions.
- Place the shaped maamoul on a baking sheet lined with parchment paper, leaving space between each cookie.
- Bake in the preheated oven for 15-20 minutes or until golden brown.
- Remove from oven and let cool for a few minutes before serving.
