Ingredients

  • Green lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Celery - 1 stalk, diced
  • Diced tomatoes - 200 grams, canned
  • Vegetable broth - 500 ml
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Coriander - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes.
  3. Stir in the cumin, paprika, and coriander, cooking for an additional 1-2 minutes until fragrant.
  4. Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the lentils are tender.
  5. Season the soup with salt, black pepper, and lemon juice. Adjust seasoning to taste.
  6. Serve hot, garnished with fresh parsley.
