- Green lentils - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 small, diced
- Celery - 1 stalk, diced
- Diced tomatoes - 200 grams, canned
- Vegetable broth - 500 ml
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Coriander - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Rinse the green lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the cumin, paprika, and coriander, cooking for an additional 1-2 minutes until fragrant.
- Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the lentils are tender.
- Season the soup with salt, black pepper, and lemon juice. Adjust seasoning to taste.
- Serve hot, garnished with fresh parsley.
