Ingredients

  • Cauliflower - 400 grams, riced
  • Green lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 400 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the green lentils under cold water and place them in a pot with 400 ml of vegetable broth. Bring to a boil, then reduce heat and simmer for about 15-20 minutes until tender, but not mushy. Drain any excess liquid if necessary.
  2. While the lentils are cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent.
  3. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  4. Stir in the riced cauliflower, cumin, cinnamon, salt, and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the cauliflower is tender and slightly golden.
  5. Once the lentils are cooked, add them to the cauliflower mixture and stir well to combine. Cook for an additional 2-3 minutes to heat through.
  6. Remove from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
  7. Serve warm, garnished with extra parsley if desired.
