Ingredients

  • Red lentil flour - 100 grams
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Water - 60 ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Italian seasoning - 1/2 teaspoon
  • Grated Parmesan cheese - 30 grams
  • Fresh parsley - 1 tablespoon, chopped
  • Cherry tomatoes - 100 grams, halved
  • Feta cheese - 30 grams, crumbled

Steps

  1. In a mixing bowl, combine the red lentil flour, egg, olive oil, water, salt, black pepper, garlic powder, and Italian seasoning. Mix until a dough forms.
  2. Knead the dough for about 2 minutes until smooth, then cover it with a damp cloth and let it rest for 10 minutes.
  3. After resting, roll the dough out on a lightly floured surface (using more red lentil flour if needed) to about 2-3 mm thickness.
  4. Cut the rolled dough into your desired pasta shape (fettuccine or tagliatelle works well).
  5. Bring a pot of salted water to a boil and carefully add the pasta. Cook for 3-5 minutes until al dente, then drain and set aside.
  6. In a skillet, heat a little olive oil over medium heat. Add the halved cherry tomatoes and sauté for about 2-3 minutes until they start to soften.
  7. Add the cooked pasta to the skillet, tossing gently to combine with the tomatoes. Cook for an additional 1-2 minutes.
  8. Remove from heat and stir in the crumbled feta cheese and chopped parsley. Adjust seasoning with salt and pepper if needed.
