Ingredients
- Red lentil flour - 100 grams
- Egg - 1 large
- Olive oil - 1 tablespoon
- Water - 60 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Garlic powder - 1/2 teaspoon
- Italian seasoning - 1/2 teaspoon
- Grated Parmesan cheese - 30 grams
- Fresh parsley - 1 tablespoon, chopped
- Cherry tomatoes - 100 grams, halved
- Feta cheese - 30 grams, crumbled
Steps
- In a mixing bowl, combine the red lentil flour, egg, olive oil, water, salt, black pepper, garlic powder, and Italian seasoning. Mix until a dough forms.
- Knead the dough for about 2 minutes until smooth, then cover it with a damp cloth and let it rest for 10 minutes.
- After resting, roll the dough out on a lightly floured surface (using more red lentil flour if needed) to about 2-3 mm thickness.
- Cut the rolled dough into your desired pasta shape (fettuccine or tagliatelle works well).
- Bring a pot of salted water to a boil and carefully add the pasta. Cook for 3-5 minutes until al dente, then drain and set aside.
- In a skillet, heat a little olive oil over medium heat. Add the halved cherry tomatoes and sauté for about 2-3 minutes until they start to soften.
- Add the cooked pasta to the skillet, tossing gently to combine with the tomatoes. Cook for an additional 1-2 minutes.
- Remove from heat and stir in the crumbled feta cheese and chopped parsley. Adjust seasoning with salt and pepper if needed.
