Ingredients

  • Green or brown lentils - 100 grams, rinsed and drained
  • Cauliflower rice - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled
  • Egg - 1 large, beaten

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium pot, combine the lentils with 500ml of water and bring to a boil. Reduce heat and simmer for 20 minutes until tender. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant, about 3-4 minutes.
  4. Add the diced bell pepper to the skillet and cook for an additional 5 minutes.
  5. Stir in the cooked lentils, cauliflower rice, tomato paste, cumin, coriander, paprika, salt, and black pepper. Mix well and cook for another 5 minutes to allow flavors to meld.
  6. Remove from heat and stir in the chopped parsley and crumbled feta cheese.
  7. Transfer the mixture to a greased baking dish and spread evenly. Drizzle the beaten egg over the top.
  8. Bake in the preheated oven for 20 minutes, or until the top is golden and set.
  9. Remove from oven and let cool for a few minutes before serving.
