Ingredients
- Green or brown lentils - 100 grams, rinsed and drained
- Cauliflower rice - 200 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50 grams, crumbled
- Egg - 1 large, beaten
Steps
- Preheat the oven to 180°C (350°F).
- In a medium pot, combine the lentils with 500ml of water and bring to a boil. Reduce heat and simmer for 20 minutes until tender. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant, about 3-4 minutes.
- Add the diced bell pepper to the skillet and cook for an additional 5 minutes.
- Stir in the cooked lentils, cauliflower rice, tomato paste, cumin, coriander, paprika, salt, and black pepper. Mix well and cook for another 5 minutes to allow flavors to meld.
- Remove from heat and stir in the chopped parsley and crumbled feta cheese.
- Transfer the mixture to a greased baking dish and spread evenly. Drizzle the beaten egg over the top.
- Bake in the preheated oven for 20 minutes, or until the top is golden and set.
- Remove from oven and let cool for a few minutes before serving.
