Ingredients

  • Labneh - 250 grams
  • Eggs - 2 large
  • Olive oil - 2 tablespoons
  • Zucchini - 100 grams, grated
  • Red bell pepper - 50 grams, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50 grams, crumbled

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the labneh, eggs, olive oil, grated zucchini, diced red bell pepper, minced garlic, cumin, paprika, salt, and black pepper. Mix until well combined.
  3. Pour the mixture into a greased baking dish (approximately 20x20 cm).
  4. Sprinkle the crumbled feta cheese evenly on top of the mixture.
  5. Bake in the preheated oven for 25-30 minutes or until the top is golden and the mixture is set.
  6. Remove from the oven and let it cool for a few minutes before slicing.
  7. Garnish with chopped fresh parsley before serving.
