Ingredients
- 2 medium zucchini (about 250g each)
- 200g ground beef or lamb
- 50g onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground allspice
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 100ml beef or chicken broth
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
Steps
- Wash the zucchini and cut off the ends, then carefully hollow out the insides using a corer or a small spoon, leaving a thick wall to hold the filling.
- In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion, and sauté until translucent.
- Add the minced garlic and cook for an additional minute until fragrant.
- In a bowl, combine the ground meat, sautéed onion and garlic, allspice, cinnamon, salt, black pepper, and parsley. Mix well until all ingredients are evenly incorporated.
- Stuff each zucchini with the meat mixture, pressing down gently to pack it in.
- In the same skillet, heat the remaining tablespoon of olive oil and place the stuffed zucchinis upright. Add the broth and cover the skillet.
- Simmer on low heat for about 30 minutes, or until the zucchinis are tender and the meat is cooked through.
- Remove the zucchinis from the skillet and drizzle with lemon juice before serving.
