Ingredients

  • 2 medium zucchini (about 250g each)
  • 200g ground beef or lamb
  • 50g onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground allspice
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 100ml beef or chicken broth
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice

Steps

  1. Wash the zucchini and cut off the ends, then carefully hollow out the insides using a corer or a small spoon, leaving a thick wall to hold the filling.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat, add the chopped onion, and sauté until translucent.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. In a bowl, combine the ground meat, sautéed onion and garlic, allspice, cinnamon, salt, black pepper, and parsley. Mix well until all ingredients are evenly incorporated.
  5. Stuff each zucchini with the meat mixture, pressing down gently to pack it in.
  6. In the same skillet, heat the remaining tablespoon of olive oil and place the stuffed zucchinis upright. Add the broth and cover the skillet.
  7. Simmer on low heat for about 30 minutes, or until the zucchinis are tender and the meat is cooked through.
  8. Remove the zucchinis from the skillet and drizzle with lemon juice before serving.
