Ingredients

  • Zucchini - 2 medium-sized
  • Cream cheese - 100 grams
  • Greek yogurt (unsweetened) - 100 grams
  • Almond flour - 30 grams
  • Stevia (or any keto-friendly sweetener) - 1 tablespoon
  • Rosewater - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch
  • Chopped pistachios (for garnish) - 10 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Wash the zucchinis and cut off the ends. Hollow out the zucchinis using a small spoon or a corer, leaving about 1 cm of flesh on the sides.
  3. In a mixing bowl, combine the cream cheese, Greek yogurt, almond flour, stevia, rosewater, vanilla extract, and a pinch of salt. Mix until smooth and well-combined.
  4. Stuff each hollowed zucchini with the cream cheese mixture, pressing gently to fill completely.
  5. Place the stuffed zucchinis in a baking dish and cover with aluminum foil. Bake in the preheated oven for 25 minutes.
  6. Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
  7. Allow the zucchinis to cool slightly before serving. Drizzle with extra Greek yogurt and garnish with chopped pistachios.
