Ingredients
- Zucchini - 2 medium-sized
- Cream cheese - 100 grams
- Greek yogurt (unsweetened) - 100 grams
- Almond flour - 30 grams
- Stevia (or any keto-friendly sweetener) - 1 tablespoon
- Rosewater - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Chopped pistachios (for garnish) - 10 grams
Steps
- Preheat your oven to 180°C (350°F).
- Wash the zucchinis and cut off the ends. Hollow out the zucchinis using a small spoon or a corer, leaving about 1 cm of flesh on the sides.
- In a mixing bowl, combine the cream cheese, Greek yogurt, almond flour, stevia, rosewater, vanilla extract, and a pinch of salt. Mix until smooth and well-combined.
- Stuff each hollowed zucchini with the cream cheese mixture, pressing gently to fill completely.
- Place the stuffed zucchinis in a baking dish and cover with aluminum foil. Bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes to lightly brown the tops.
- Allow the zucchinis to cool slightly before serving. Drizzle with extra Greek yogurt and garnish with chopped pistachios.
