Ingredients
- Almond flour - 100 grams
- Butter - 50 grams (melted)
- Cream cheese - 100 grams
- Mozzarella cheese - 100 grams (shredded)
- Erythritol - 50 grams (or to taste)
- Rose water - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Pistachios - 20 grams (crushed, for topping)
- Water - 100 ml
Steps
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the almond flour with melted butter until well combined.
- Press the almond flour mixture into the bottom of a greased small baking dish to form a crust.
- In a saucepan, combine the cream cheese and mozzarella cheese over low heat, stirring until melted and smooth.
- Remove from heat and stir in erythritol, rose water, and vanilla extract until well incorporated.
- Pour the cheese mixture over the almond crust, spreading it evenly.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and set.
- While the knafeh is baking, prepare the syrup by boiling water with a sweetener of your choice until it thickens slightly.
- Once the knafeh is done, remove it from the oven and drizzle the syrup over the top.
- Garnish with crushed pistachios before serving.
