Ingredients

  • Almond flour - 100 grams
  • Butter - 50 grams (melted)
  • Cream cheese - 100 grams
  • Mozzarella cheese - 100 grams (shredded)
  • Erythritol - 50 grams (or to taste)
  • Rose water - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Pistachios - 20 grams (crushed, for topping)
  • Water - 100 ml

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the almond flour with melted butter until well combined.
  3. Press the almond flour mixture into the bottom of a greased small baking dish to form a crust.
  4. In a saucepan, combine the cream cheese and mozzarella cheese over low heat, stirring until melted and smooth.
  5. Remove from heat and stir in erythritol, rose water, and vanilla extract until well incorporated.
  6. Pour the cheese mixture over the almond crust, spreading it evenly.
  7. Bake in the preheated oven for 20-25 minutes, or until the top is golden and set.
  8. While the knafeh is baking, prepare the syrup by boiling water with a sweetener of your choice until it thickens slightly.
  9. Once the knafeh is done, remove it from the oven and drizzle the syrup over the top.
  10. Garnish with crushed pistachios before serving.
