- Almond flour - 100 grams
- Unsweetened shredded coconut - 30 grams
- Butter - 50 grams, melted
- Cream cheese - 100 grams, softened
- Heavy cream - 100 ml
- Erythritol - 30 grams
- Rose water - 1 teaspoon
- Pistachios - 20 grams, chopped (for garnish)
- Salt - a pinch
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, shredded coconut, melted butter, and a pinch of salt until a crumbly mixture forms.
- Press half of the mixture into the bottom of a greased 20 cm (8 inch) round baking dish to form the base.
- In another bowl, mix the softened cream cheese, heavy cream, erythritol, and rose water until smooth and creamy.
- Spread the cream mixture evenly over the almond flour base in the baking dish.
- Top with the remaining almond flour mixture, pressing down gently to create a crust.
- Bake in the preheated oven for 20-25 minutes or until the top is golden brown.
- Remove from the oven and let cool for a few minutes before garnishing with chopped pistachios.
- Serve warm or at room temperature.
