Ingredients

  • Almond flour - 100 grams
  • Unsweetened shredded coconut - 30 grams
  • Butter - 50 grams, melted
  • Cream cheese - 100 grams, softened
  • Heavy cream - 100 ml
  • Erythritol - 30 grams
  • Rose water - 1 teaspoon
  • Pistachios - 20 grams, chopped (for garnish)
  • Salt - a pinch

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, shredded coconut, melted butter, and a pinch of salt until a crumbly mixture forms.
  3. Press half of the mixture into the bottom of a greased 20 cm (8 inch) round baking dish to form the base.
  4. In another bowl, mix the softened cream cheese, heavy cream, erythritol, and rose water until smooth and creamy.
  5. Spread the cream mixture evenly over the almond flour base in the baking dish.
  6. Top with the remaining almond flour mixture, pressing down gently to create a crust.
  7. Bake in the preheated oven for 20-25 minutes or until the top is golden brown.
  8. Remove from the oven and let cool for a few minutes before garnishing with chopped pistachios.
  9. Serve warm or at room temperature.
