Ingredients

  • Almond flour - 100 grams
  • Unsalted butter - 50 grams, melted
  • Erythritol - 30 grams (or to taste)
  • Ground cinnamon - 1/2 teaspoon
  • Cream cheese - 100 grams, softened
  • Greek yogurt - 50 grams
  • Vanilla extract - 1 teaspoon
  • Pistachios - 20 grams, crushed (for garnish)
  • Water - 200 ml (for syrup)
  • Erythritol - 50 grams (for syrup)
  • Rose water - 1 teaspoon (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted butter, erythritol, and ground cinnamon until you achieve a crumbly texture.
  3. Press half of the almond flour mixture into the bottom of a small baking dish to form the base.
  4. In another bowl, mix together the cream cheese, Greek yogurt, and vanilla extract until smooth.
  5. Spread the cream cheese mixture evenly over the almond flour base.
  6. Top with the remaining almond flour mixture, pressing down gently to compact it.
  7. Bake in the preheated oven for 20 minutes or until the top is golden brown.
  8. While the Knafeh is baking, prepare the syrup by combining water and erythritol in a small saucepan over medium heat. Stir until erythritol is dissolved and let it simmer for 5 minutes.
  9. If using, add rose water to the syrup and mix well. Remove from heat and let it cool slightly.
  10. Once the Knafeh is baked, remove it from the oven and drizzle the cooled syrup over the top.
  11. Garnish with crushed pistachios and serve warm.
