Ingredients
- Almond flour - 100 grams
- Unsalted butter - 50 grams, melted
- Erythritol - 30 grams (or to taste)
- Ground cinnamon - 1/2 teaspoon
- Cream cheese - 100 grams, softened
- Greek yogurt - 50 grams
- Vanilla extract - 1 teaspoon
- Pistachios - 20 grams, crushed (for garnish)
- Water - 200 ml (for syrup)
- Erythritol - 50 grams (for syrup)
- Rose water - 1 teaspoon (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted butter, erythritol, and ground cinnamon until you achieve a crumbly texture.
- Press half of the almond flour mixture into the bottom of a small baking dish to form the base.
- In another bowl, mix together the cream cheese, Greek yogurt, and vanilla extract until smooth.
- Spread the cream cheese mixture evenly over the almond flour base.
- Top with the remaining almond flour mixture, pressing down gently to compact it.
- Bake in the preheated oven for 20 minutes or until the top is golden brown.
- While the Knafeh is baking, prepare the syrup by combining water and erythritol in a small saucepan over medium heat. Stir until erythritol is dissolved and let it simmer for 5 minutes.
- If using, add rose water to the syrup and mix well. Remove from heat and let it cool slightly.
- Once the Knafeh is baked, remove it from the oven and drizzle the cooled syrup over the top.
- Garnish with crushed pistachios and serve warm.
