Ingredients

  • Ground beef - 200 grams
  • Almond flour - 100 grams
  • Pine nuts - 30 grams
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Mint leaves - 1 tablespoon, chopped
  • Cinnamon - 1/2 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. In a mixing bowl, combine the ground beef, sautéed onion and garlic, chopped parsley, mint leaves, cinnamon, allspice, salt, and black pepper. Mix well until all ingredients are incorporated.
  4. In a separate bowl, mix almond flour with a pinch of salt and add enough water (about 50 ml) gradually until a dough forms that is firm but pliable.
  5. Take a small portion of the dough and flatten it in your palm. Place a tablespoon of the beef mixture in the center and fold the dough around it, forming a ball or oval shape. Repeat with the remaining dough and filling.
  6. In a large pot, bring water to a simmer. Gently drop the kibbeh balls into the simmering water and cook for about 10-15 minutes until they float to the surface.
  7. Remove the kibbeh from the water and let them drain on a paper towel.
  8. Drizzle with lemon juice before serving and top with toasted pine nuts.
