Ingredients

  • Ground beef - 250 grams
  • Ground lamb - 250 grams
  • Onion - 1 small, finely grated
  • Garlic cloves - 2, minced
  • Fresh parsley - 2 tablespoons, finely chopped
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Allspice - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon (for brushing)
  • Lemon wedges - for serving

Steps

  1. In a large mixing bowl, combine the ground beef, ground lamb, grated onion, minced garlic, chopped parsley, cumin, paprika, allspice, salt, and black pepper.
  2. Using your hands, mix the ingredients thoroughly until well combined. Cover the mixture and let it rest in the refrigerator for 15 minutes to allow the flavors to meld.
  3. Preheat your grill or grill pan over medium-high heat. While it's heating, shape the meat mixture into elongated kebabs, about 5-7 cm long, and thread them onto skewers (if using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning).
  4. Brush the kebabs lightly with olive oil to prevent sticking and enhance flavor.
  5. Place the kebabs on the preheated grill and cook for about 4-5 minutes on each side, or until they are browned and cooked through.
  6. Remove the kebabs from the grill and let them rest for a few minutes before serving.
  7. Serve the kebabs with lemon wedges on the side for squeezing over the top.
